Hi,
Normally this is a very simple operation.
In the languages folder there is a file flex.po
With flex.po I translated and generated flex.mo
I have tried different combinations but my translation are not read:
flex.po
it_IT.po
flex-it_IT.po
In the documentation is not indicated anything about it.

Are you created new file from flex.po file and added translation text there? New file name will be it_IT.po and it_IT.mo .

Absolutely no translation plugin, it makes no sense.
This is a negative aspect of Flex.
A theme business, it must be possible to translate, at least for the public side.
Fortunately the solution is directly translate the PO file in Genesis Framework, but please, consider the possibility of being able to translate, Flex Pro is a commercial theme.

A suggestion to create a language file:
rename from flex.po to flex.pot
Then, open Poedit, will be asked to select the language, and will be generated automatically a .mo and .po file, with the correct language code.
I understand your concern. However, flex is a child theme of the Genesis Framework. While we can translate text elements used in the child theme, parent Genesis Framework translation is not possible at the child theme level, it has to be done at core framework level.
